Apple Muffins, No Sugar (Muffin alla Mela senza Zucchero)

You need:muffin tinmixing bowl

Ingredients

  • 1 ripe, sweet apple
  • 1 egg
  • 80 g oat flour (or fine oats blended to a flour)
  • 30 g plain whole yogurt, unsweetened
  • A pinch of cinnamon
  • A drizzle of extra virgin olive oil, for the tin

Method

  1. Preheat the oven to a moderate heat and lightly oil a mini-muffin tin.
  2. Grate the apple finely and stir it together with the egg and yogurt.
  3. Fold in the oat flour and cinnamon until just combined.
  4. Spoon the batter into the tin, filling each hollow about three-quarters.
  5. Bake until golden and a skewer inserted in the centre comes out clean.
  6. Cool completely in the tin; the muffins firm up further as they cool.

Age adaptations

9-12 months

Offer a mini muffin broken into soft, graspable pieces; check each piece squashes easily between your fingers before serving.

12+ months

Serve a whole mini muffin as part of a mixed merenda plate with soft fruit or plain yogurt.

Storage

Cool completely, then refrigerate in a sealed container for up to 3 days, or freeze in a single layer before bagging, up to 1 month. Thaw and check the texture is soft before serving.

For the family

Stir a spoonful of honey or a scatter of chopped walnuts into the adult portion of the batter - honey for adults only, never under 12 months.

Safety notes

  • Zero added sugar in this recipe; the ripe apple is the only source of sweetness, with no sugar, honey or syrup added.
  • No added salt.
  • No honey used at any stage, relevant since this is under 12 months.
  • Tagged for egg and gluten: egg is used as the binder, and oats carry cross-contact traces from shared milling with wheat, barley or rye. Choose certified "senza glutine" oats if required. This is a labelling precaution, not a recommendation to delay allergens, which the rulebook advises against (Section 3).
  • Baked soft in mini-muffin size and checked for a fully cooked, squashable centre before serving, in line with finger-food geometry guidance (Section 4).
  • Serve seated upright, supervised, in a calm setting with no screens; never force-feed.
