Cauliflower Puree (Passato di Cavolfiore)

Ingredients

  • 1 small head cauliflower, cut into small florets, tough core and leaves discarded
  • Water, for steaming
  • Water or vegetable broth (recipe 01), unsalted, to loosen
  • 1 tsp extra virgin olive oil (EVOO)

Method

  1. Trim the cauliflower into small florets, discarding the tough core and any leaves.
  2. Steam over boiling water for 8-10 minutes, until completely soft, softer than you would cook it for yourself, so a floret crushes easily against the roof of the mouth.
  3. Blend to a smooth puree, loosening with cooking water or broth a spoonful at a time until silky.
  4. Stir through the EVOO off the heat and cool to a safe serving temperature before offering.

Steaming rather than boiling is what keeps the flavour mild here too. Cauliflower boiled in a full pot of water can turn watery and take on a stronger smell; steaming keeps it gentle and a little sweet.

Age adaptations

6 months

Offer a very smooth, single-ingredient puree, loosened with a little cooled cooking water or unsalted broth so it runs slowly off the spoon. Start with a teaspoon once a day and follow your baby's pace. Begin only once your baby shows clear readiness signs (good head and neck control, able to sit with support, showing interest in food, and no longer pushing food out with the tongue). Introduce one new food at a time, a few days apart, so any reaction is easy to spot.

6-8 months

Blend completely smooth with no fibres. Steam a little past soft, until a floret collapses under light finger pressure, before blending.

9-12 months

Mash with a fork, leaving a soft, easily squashable texture. Whole steamed florets are a separate finger food at this age, offered on their own rather than mixed into this puree.

12+ months

Serve as a chunkier mash, or alongside whole soft-steamed florets as part of a mixed plate.

Storage

Fridge for 2-3 days in a sealed container. Freeze in ice-cube trays or small pots for up to 3 months; defrost fully in the fridge, reheat until piping hot, then cool before serving.

For the family

Steam extra cauliflower and roast it with olive oil and a pinch of salt and cumin for the grown-ups, seasoning only once your baby's portion has been set aside.

Safety notes

Cauliflower isn't individually named in Ministero Table 1, so the general fibrous/hard-produce principle applies by analogy: cook until soft and remove anything tough or stringy. Steam rather than boil, and cook well past normal adult tenderness so a floret crushes easily against the roof of the mouth. Whole florets served as a finger food are kept small and steamed to the same soft point. Serve seated upright at the table, actively supervised and free of distractions; remember that safe preparation, not supervision, is the primary safeguard. Complementary feeding begins at 6 months, the age recommended by Italian (Ministero della Salute, SIP) and WHO guidance. Start only when your baby is showing clear readiness signs, following official Italian guidance.
