Green Bean Puree (Passato di Fagiolini)

Ingredients

  • A generous handful of green beans (fagiolini), topped and tailed
  • Water or vegetable broth (recipe 01), unsalted

Method

  1. Wash the beans, trim both ends and remove any tough strings along the sides.
  2. Steam or boil in unsalted water for 10-12 minutes until very soft; test by pressing one against the side of the pan, it should mash easily.
  3. Blend to a smooth puree, adding a little cooking water or broth to loosen.
  4. Pass through a sieve if any fibrous strands remain, green beans can be stringy even when soft.
  5. Cool before serving.

Age adaptations

6 months

Offer a very smooth, single-ingredient puree, loosened with a little cooled cooking water or unsalted broth so it runs slowly off the spoon. Start with a teaspoon once a day and follow your baby's pace. Begin only once your baby shows clear readiness signs (good head and neck control, able to sit with support, showing interest in food, and no longer pushing food out with the tongue). Introduce one new food at a time, a few days apart, so any reaction is easy to spot.

6-8 months

Blend completely smooth and sieve out any fibres. Green beans have tough strings that must not be left in a puree at this age.

9-12 months

Mash well, or offer whole well-cooked beans cut into short lengths for supervised self-feeding, cooked until they squash easily between two fingers.

12+ months

Offer soft-cooked whole beans cut into finger-length pieces as part of a mixed plate.

Storage

Fridge for 2-3 days, sealed container. Freezes well for up to 3 months.

For the family

Toss the extra beans in olive oil with garlic and a squeeze of lemon for an adult side, seasoning after your baby's portion has been set aside.

Safety notes

Green beans are fibrous and can have tough strings. Always top, tail and de-string them, and cook until very soft. Whole beans offered as a finger food must be cut into short lengths, not left long, and cooked soft enough to squash easily. Serve seated upright at the table, actively supervised and free of distractions; remember that safe preparation, not supervision, is the primary safeguard. Complementary feeding begins at 6 months, the age recommended by Italian (Ministero della Salute, SIP) and WHO guidance. Start only when your baby is showing clear readiness signs, following official Italian guidance.
